Traditional Hawaiian Event

Last month I planned a Luau for the community I work for. We had a traditional whole hog roast meal and traditional Hawaiian dancers and fire dancers. 

I had stressed about it for weeks but it all came together perfectly! The food was delicious and the dancers were incredible. I haven't been lucky enough to go to Hawaii yet but from those that were there that have been said they felt like they were at a real Hawaiian show!

Thankful Thursday

I'm thankful that tonight Hebron Church League Softball starts! While all our husbands play us wives get to socialize, and of course, people watch! Our husbands are the defending champs so hopefully we start the season off right tonight with a win! 


Also, before the game, my best friend Lindsey and I are going to get a much needed pedicure!

Happy Fathers Day!

I'm a day late but anytime is a good time to tell someone how much you appreciate them! Happy Father's Day to my wonderful Daddy. I couldn't ask for anything more in a Father. He's always been there when we needed him. He's always been such a hard worker and has to travel a lot but he was always there for the important things. I think he only missed one of my high school basketball games and he made sure my mom taped it so he could watch it later. He loves to spoil his girls, and even the dogs! If there's anything I ever need I never hesitate to ask because he'll always be there to help. I love you so much! Thanks for all you do!

I am thankful for so many things today. But to name a few... (warning, some are superficial!)

I am thankful that the Lord works in mysterious ways!
I am so thankful for my parents and that they are healthy!
I am thankful for family!
I'm thankful my in-laws have tons of old home videos that my Husband and I have been enjoying this past week!
I'm thankful that my husband just got a big promotion at work! He's worked so hard for it!
I'm thankful for my wonderful friends who I can't wait to see this weekend!
I'm thankful we have friends with a boat!
I'm thankful that the weekend is almost here!!!

Frozen Meal- Chicken Fajitas

A couple months ago I decided to try and make some FREEZER MEALS. I spent a Sunday afternoon packing up some meals that I am still reaping the benefits from almost 2 months later! My favorite so far has been Chicken Fajitas. 

I filled a freezer bag with 3 Chicken Breasts, 1 sliced onion, and sliced 1/2 of a Red, Yellow, and Orange Pepper. 

When I pulled it out of the freezer to make in the crock pot, I didn't defrost it. I just ran it under warm water to be able to easily get it out of the bag. 

I dumped it into the crock pot and added some salt and pepper. 

After cooking on low for 9 hours, this is what it looked like when I got home.

Grab a fork and a knife and start shredding. It's so tender and juicy that it's really easy to do!

Serve on Flour Tortillas. And don't forget to top with the best part- Sour Cream!!
